    Crockpot: place all ingredients except spinach in the crockpot. Cook on low 6 to 7 hours or high 4 to 5 hours. Remove bay leaf, stir in spinach, serve.

    Stovetop: place all ingredients except spinach in a large pot. Slow boil, reduce heat, simmer about 20 minutes until carrots are tender. Remove bay leaf, stir in spinach.

    Instant Pot: place all ingredients except spinach in the pressure cooker. Manual high pressure for 8 minutes. Quick release, remove lid, stir in spinach.
