    Crockpot: place all ingredients except spinach in the crockpot. Cook low 6 to 8 hours or high 4 to 5 hours. Stir in spinach until wilted.

    Stovetop: saute onion and garlic in a saucepan until translucent. Stir in spices, add tomatoes, beans, and bay leaf. Simmer covered 15 to 20 minutes. Stir in spinach.

    Instant Pot: place all ingredients except spinach in the pressure cooker. Stew setting, high pressure 5 minutes. Quick release, stir in spinach.

    Serve with rice or naan.
