    Crockpot: place all ingredients except spinach in the crockpot. Cook low 6 to 8 hours or high 4 to 5 hours. Stir in spinach.

    Stovetop: saute onion and garlic until translucent. Add spices, tomatoes, chickpeas, and bay leaf. Simmer covered 15 to 20 minutes. Stir in spinach.

    Instant Pot: stew setting, high pressure 5 minutes. Quick release, stir in spinach.

    Cook rice separately and serve alongside.
