    Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Stir peanut butter thoroughly if the oil has separated.

    In a large bowl, combine peanut butter, maple syrup, 1/4 cup coconut sugar, and vanilla extract. Mix until smooth.

    Add flour, baking soda, and salt. Stir until a dough forms.

    Scoop approximately 1 1/2 tablespoons of dough per cookie and roll into balls.

    Place cookies about 3 inches apart on the baking sheet.

    Put the remaining 2 teaspoons coconut sugar in a small bowl.

    Use a fork to flatten each dough ball with a crisscross pattern, dipping the fork into the sugar between cookies to prevent sticking.
