Stir peanut butter thoroughly if the oil has separated.

In a large bowl, combine peanut butter, maple syrup, 1/4 cup coconut sugar, and vanilla extract. Mix until smooth.

Scoop approximately 1 1/2 tablespoons of dough per cookie and roll into balls.

Place cookies about 3 inches apart on the baking sheet.
