    Halve leeks lengthwise, slice thin, and soak in several changes of water to remove sand.

    Heat 1 tablespoon balsamic vinegar and 1 tablespoon stock in a saucepan. Sweat onions and leeks until translucent.

    Add garlic and mushrooms; saute briefly.

    Add remaining stock and vinegar. Bring to a boil.

    Reduce heat to low and cook, partially covered, for 20 minutes.

    Season with salt and pepper to taste.
