Crockpot: add all ingredients except spinach and pasta, with zucchini on top. Cook low 5 to 6 hours or high 3 to 4 until carrots are very soft. Add water as needed.

Cook pasta separately on stovetop. Add to soup.

Fold in spinach gently until wilted.

Stovetop: all ingredients except spinach and pasta in a saucepan. Slow boil, then simmer 45 minutes. Cook pasta separately and add. Fold in spinach.
