    Place ingredients in crockpot with mushrooms on top.

    Cook low 6 to 8 hours or high 4 to 5 until vegetables are soft.

    Before serving, blend 2 to 3 cups of stew until smooth and stir back in.

    For thicker stew, whisk arrowroot into 1/2 cup hot broth and add.
