Crockpot: all ingredients except arrowroot. Low 7 to 8 hours or high 4 to 5. 30 minutes before serving, whisk arrowroot into 1/2 cup liquid and stir back in.

Stovetop: all ingredients except arrowroot in a pot. Low boil covered, simmer 30 to 45 minutes until carrots are soft. Thicken with arrowroot.
