Mini Crustless Tofu Quiches

Light protein-packed muffin-tin quiches made with silken tofu, nutritional yeast, mushrooms, and bell pepper.

    Preheat oven to 375 F. Spray 12 muffin cups well with non-stick spray.

    Saute the garlic, bell peppers, and mushrooms until mushrooms exude their juices. Stir in chives, rosemary, and pepper. Remove from heat.

    In a food processor, blend tofu, soymilk, nutritional yeast, cornstarch, tahini, onion powder, turmeric, and salt until silky smooth.

    Combine tofu mixture with vegetables. Spoon into 12 muffin cups (about halfway).

    Put muffin pan in oven and immediately reduce heat to 350 F. Bake 25 to 35 minutes until tops are golden.

    Cool 10 minutes before serving.
