    Saute onion, carrot, and mushroom in olive oil until onion is translucent. Add garlic, saute 1 minute.

    Stir in lentils. Add vegetable broth and bring to a boil.

    Reduce heat to medium-low. Cover and simmer until lentils are tender and broth absorbed (about 15 minutes).

    Meanwhile, cook rice according to package instructions.

    Combine rice with lentils. Add olives, parsley, and thyme.
