Cut apples into quarters without peeling or coring.

Add apples, vinegar, and water to a large pot. Cover, boil, then simmer until apples soften, about 20 minutes.

Force pulp through a chinois sieve or food mill into a large bowl. Measure puree.

Add 1/2 cup sugar per cup of puree. Add salt, cinnamon, cloves, allspice, lemon rind, and juice.

Cook uncovered in a wide thick-bottomed pot on medium-low, stirring constantly to prevent burning, 1 to 2 hours.

Test by spooning a bit onto a cold plate; when it sets cleanly, it's done.

Pour into sterilized jars and seal. Hot water bath 10 minutes for shelf storage.
